HOW TO BUY CAVIAR

The first thing a buyer should look for is to see that the berries (eggs) are intact, ready to pop. If caviar has been frozen, the berries will be brown and mushy.

Secondly, consider taste. If the caviar tastes fishy, it is no good. It should not taste too salty either.
Sometimes caviar may have a sweet taste because borax is added. Caviar with an addition of borax is not allowed in IKRAA Caviar.
